

Panzanella is the ultimate summer side dish, it’s essentially a crunchy bread salad made up of chopped summer vegetables, juicy fruit and fresh herbs. Traditionally a panzanella is made with tomatoes, unfortunately tomatoes aren’t ready yet in Upstate, NY. Truthfully this is just as good without them, the peaches however are a non negotiable. Wait until they are ripe enough to make the most of this dish!
In full transparency, I made this as a “meal prep” dish but it’s best enjoyed the same day you make it. Because I had to make everything look extra gorgeous in my video, I made a small sacrifice and ended up losing the bright colors, and crunch factor a few days later.
If you want to prep this ahead, my recommendation would be to keep all your ingredients separate and it will hold up perfectly!
Chop your cucumbers and put them in their own container, store the snap peas and radish separately, and cut the peach when you are just about to plate your salad. Only combine everything with the dressing once you are about to eat.
