I am a chicken salad lovergirl, I literally dream up different chicken salad flavors in my sleep. My favorites right now are tarragon chicken salad, sesame ginger chicken salad, and now this lemon basil chicken salad! I’m not going to lie, chicken salad from the store scares me. It’s often packaged as a flavorless glob of meat, mayo and dried cranberries – and that is just not okay…
I will never stop trying to convince people to swap out greek yogurt for mayo. Especially in a chicken salad, its so creamy, 1 billion times more tasty, and 1 trillion times more nutritious for you! I hate to be that person but I just want to remind you that 1 cup of mayo is 1440 calories and 1 cup of greek yogurt is 200 calories. Yeah….. girl, I know. Even if you are trying to put on weight I would still suggest skipping the mayo, and just using greek yogurt and olive oil for a healthy fat. Sorry but I am in fact a mayonnaise hater.
This chicken salad makes about 4 -5 servings depending on the size of your portions, but if you’re making this for you and another person I suggest doubling up. You won’t regret it, I promise!
