Grilled Veggie Salad with Feta and Marinated Onions

I don’t understand why grilling is always associated with burgers, men, and meat….and never a nice healthy grilled veggie salad? America is weird like that. I’m fairly new to this Girls Who Grill lifestyle, I didn’t have a backyard growing up in brooklyn and I also didn’t eat red meat until very recently. So I sadly never got to partake in the grilling festivities (god forbid someone buys a pack of veggie burgers).
Now that I’m older and braver, you can’t pry me away from the grill. Don’t get me wrong I love grilling meat too, but I usually opt for a nice marinated piece of grilled chicken, or lately a crispy light whole fish like Branzino. But aside from meat, grilled vegetables are where it’s at. You really don’t need any fancy seasonings or even a technical recipe to make a good grilled veg salad. The char from the grill creates a flavor all on its own.
This salad checks all the boxes for me because it has my favorite carb (potatoes), it has juicy marinated onions, and lots of fresh summery herbs. I mostly used vegetables that were available at the local farmers market with the addition of store bought onions and peppers. But feel free to use whatever you have available to you. The only thing I would not omit is the marinated onions, they are literally life changing!
